  • Conferences Galore

    Buy week

    First off on Tuesday I headed to Youthreach Conference in Sligo where I gave a short talk to tell all the tutors etc about Just Look and Cook

    Then on Saturday myself and Jp set off for Autism Action Expo. We had a great day and met loads of lovely people, who showed great interest in Just Look and Cook

    My sons headed in the other direction to Castlebar where they were very well recieved by the Irish Mens Shed Association with whom I had ran courses, for the Tubbercutty group. A nicer bunch you could never hope to meet.

  • Chicken Maryland Variations

    Tip 3

    (Chicken Maryland recipe)

    For Spicy Chicken -

    At step 3 page 50. Add your spice of choice (chilli powder, cajun powder, 5 spice etc) to the breadcrumbs, approx. 1/4 teaspoon add more if you like it hotter.

    Lovely with homemade chips (pg 23 &24) and coleslaw.

    For Chicken Gougons

    After step 6, page 50, cut each chicken fillet into 3-4 strips (depending on size of the fillet). Continue to follow the recipe as normal until you reach step 21 page 53. You may need to reduce cooking time slightly to avoid drying out the chicken.

    Delicious for tapas at a dinner party or family gathering!

    Meal for 1

    If you are cooking for 1 using the chicken maryland recipe:

    Prepare food as far as step 9. Then, cover 1 chicken fillet and store in fridge for tomorrow. Continue with the recipe with 1 chicken fillet to the end.

    Tomorrow, take your stored fillet from the fridge and continue the recipe from step 9. This way you are getting a freshly cooked chicken fillet instead of having to reheat it but all the hard messy work is done.
